Healthy Chicken Noodle Soup

When it starts to get chilly outside, nothing beats a hot bowl of soup! This hockey season Justin and I have started to buy whole chickens at the grocery store a lot more and then using the carcass to make homemade soup! Accompanied with a little bit of a French baguette, it doesn't get much better than that.


Healthy Chicken Noodle Soup

Ingredients:

  • 8 Cups of Chicken Broth**

  • 2 Chicken Breasts Shredded

  • 4 Carrots Chopped

  • 4 Celery Stalks Chopped

  • 1 Medium White Onion Chopped

  • 1 Tablespoon of Herbs De Provence/Italian Seasoning

  • 1 Bay Leaf

  • 1 Teaspoon of Garlic Powder

  • 8oz of Gluten Free or Whole Grain Noodles

  • Salt & Pepper to Taste

Directions:

  1. In a pot, combine the chicken broth, carrots, celery, onion, Italian seasoning, bay leaf, and garlic powder.

  2. Bring pot to a boil, simmer for 5 minutes.

  3. Add the pasta, cook for an additional 8-12 minutes until noodles are al dente.

  4. Add the shredded chicken.

  5. Add salt and pepper to taste!

*You can use store bought chicken broth or you can make your own like we like to do with the carcass, simply throw it in the pot and boil for two hours with one chicken bouillon cube, strain, and you have homemade, delicious chicken broth)
